Italian Marinara Sauce

I love this Italian Marinara Sauce for the simple reason that I can whip it up using ingredients that I have in my store cupboard. Essential in this recipe is a good pinch of chili flakes for extra flavor. Use any type of pasta shapes you like. I love to use shapes that scoop up the sauce.

Add garlic, onion, and a pinch of chili flakes to a pot with some olive oil. Cook until golden and stir in tomatoes, oregano, and salt. Reduce heat to low and cook while stirring occasionally. Cook pasta in boiling salted water until al dente. Taste and adjust the sauce seasoning. Drain pasta and reserve some of the pasta water. Combine pasta and sauce. Increase heat and toss well to coat and let the pasta absorb the flavor from the sauce. Thin the sauce with pasta water as required. Serve with a drizzle of olive oil, basil, oregano and chili flakes. Yum!

    Heat 1 tablespoon of olive oil over medium heat in a medium saucepan.

    Add 2 finely sliced garlic cloves, 1 small diced onion, and a pinch of chili flakes and saute gently for about 4-5 minutes until golden.

    Stir in 1 can of tomatoes, ½ teaspoon of oregano, and a good pinch of salt. Reduce heat to low and cook for 15 minutes while stirring occasionally. If using plum tomatoes, crush them with the back of a wooden spoon while stirring the sauce.

    Cook ½ pound of pasta in boiling salted water until al dente.

    Drain pasta and reserve about ½ a cup of the cooking water. Stir the pasta into the marinara sauce and increase the heat to high. Toss well to coat and let the pasta absorb the flavor from the sauce. Add more reserved pasta water to thin out the sauce, if required.
