To make this classic tzatziki sauce, start out with the cucumber. Use a grater box to shred the cucumber. Place the shredded cucumber in a fine mesh sieve and drain it overnight in the fridge. If you’re pressed for time, gently press the cucumber into the sieve to squeeze out any excess water. Combine the full-fat Greek yogurt, minced garlic, extra-virgin olive oil, white vinegar, and a pinch of salt. Set aside for the flavors to marry and mingle. Alternatively, you can mix all of the ingredients except for the cucumber and dill, then cover and refrigerate the yogurt mixture overnight while the cucumber drains. Just before serving, stir the drained cucumber and the minced fresh dill into the yogurt mixture. Eat and enjoy!

Combine yogurt, garlic, oil, vinegar, and salt

In a large bowl, combine 1 ½ cups plain full-fat Greek yogurt, 2 minced garlic cloves, 2 tablespoons extra-virgin olive oil, 1 tablespoon white vinegar, and ½ teaspoon salt. Cover and transfer to the fridge overnight. Skip if you plan to serve the tzatziki sauce immediately.

Add cucumber and dill

Add the drained cucumber and 1 tablespoon minced fresh dill to the yogurt mixture and stir to combine.
