1 tbsp Lemon juice or vinegar
½ tsp Garlic powder
1 pinch Dill generous of fresh or freeze-dried

This Lentil Greek Salad With Dill Sauce is a perfect meal prep recipe. Make this tasty fresh salad on a weekend and enjoy it for lunch all week. It is a healthy and nutritious combination of lentils, tomatoes, cucumbers, kalamatas, topped with a big dollop of delicious homemade fresh dill yogurt sauce.

This salad is so easy to make, too – start by cooking lentils. Divide all the ingredients between meal prep containers. To make the dill yogurt dressing, mix the Greek yogurt with olive oil, vinegar, garlic powder, and dill in a separate bowl. Store everything in the fridge until you are ready to eat. Before lunch, mix the ingredients for each salad and drizzle with olive oil, lemon juice, and a pinch of salt. Top with a large dollop of the dill yogurt sauce.

Cook lentils

Cook 1 cup of lentils in boiling water for about 15 minutes.

Divide ingredients

Divide the pint of cherry tomatoes, 1 diced cucumber, 3 drained cans of tuna, cooked lentils and kalamata olives between meal prep boxes.

Make yogurt dressing

In a small bowl, combine 1 cup of Greek yogurt with 1 tablespoon of olive oil, 1 tablespoon of vinegar or lemon juice, ½ a teaspoon of garlic powder, 1 generous pinch of fresh or freeze-dried dill, and 1 teaspoon of salt. Stir well until fully combined.

Store in refrigerator

Place the meal prep boxes and the dressing in the refrigerator to chill.

Mix and dress salad

When you are ready to eat, toss each salad. Drizzle with olive oil, lemon juice and add a pinch of salt.

Serve topped with a large dollop of dill yogurt dressing.
