I love to make use of my bento lunch boxes to make this fantastic No Cook Greek Pita Bento Box for weekday lunches. If you’re not familiar with bento-style lunch boxes, it is like a typical lunch box with separate compartments for different foods.
To make this delicious salad, start by combining all of the Greek salad ingredients. Divide between four bento lunch boxes. Divide all remaining ingredients between each of the bento boxes – chicken in one compartment, tzatziki in another, and mini pitas in another. These bento salads will keep in the fridge for up to 4 days but maybe toast the pita bread after day 3!
To make my version of No Cook Greek Pita Bento Box, you will need the following ingredients:
In a large bowl, combine 1 cup of cherry tomatoes, 2 cups of diced cucumber, ½ a chopped bell pepper, ¼ cup of diced red onion, 2 tablespoons of feta cheese, and olives.
Divide the salad between four bento lunch boxes.
Place chicken in another compartment of the bento boxes. Divide tzatziki between another one of the compartments and mini pitas in the remaining compartment.
Place the bento boxes in the refrigerator for up to 4 days.
Serve cold and enjoy!
