Smoked Mackerel & Leek Hash with Horseradish
This Smoked Mackerel & Leek Hash with Horseradish is a delicious alternative savory breakfast. I love to make this in the week after Christmas when I am tired of turkey and craving some strong flavors. In steps oily and slightly smoky mackerel and strong fiery horse radish. This is a flavor combination that shouldn’t work but somehow does!Â
It couldn’t be easier to prep either. Simply cook some new potatoes in the microwave. While the potatoes cook, cook some leeks in a frying pan. Add the cooked potatoes to the pan and crisp them in the hot oil. Flake in the mackerel. Break four eggs into the pan and cover with a lid until they are cooked. Serve with horseradish on the side.Â

Fish dinner is the best kind of dinner it was absolutely filled with flavor and mouth watering!
I used olive oil instead of vegetable oil and added some lemon juice to this too.
Tiny meal for one or two people but tasty nonetheless I liked it.
The eggs actually go great with the mackerel fish think I'll try making this again but switching it up a bit with the spices.
Brought this to work for lunch and had it cold better than any salad haha.
