So why wait for takeout when you can have a healthy and delicious meal on the dinner table sooner than it would take to choose a takeout menu? 

For this recipe, you’ll need a balsamic vinaigrette. You can certainly use a store-bought one. But it’s also so easy to make at home that you’ll never buy the store-made vinaigrette again. Simply combine 3 teaspoons balsamic vinegar, 3 teaspoons olive oil, ¼ teaspoon salt, and ¼ teaspoon black pepper in a small bowl. Just a few swirls and you’ll get a lovely balsamic vinaigrette. Drizzle the salmon fillets with half of the prepared vinaigrette and broil the fish until opaque and flaky. Use the remaining balsamic vinaigrette as a dressing for spinach. Serve the salmon over the greens topped with avocado, walnuts, sunflower kernels, and dried cranberries. Enjoy!

Prepare fish fillets

Drizzle 2 salmon fillets with 1 tablespoon balsamic vinaigrette. Place on a parchment-lined broiler pan.

Broil 3-4 inches from the heat until the fish flakes easily with a fork, about 10 to 15 minutes.

Dress spinach

In the meantime, to a large bowl, add 3 cups fresh baby spinach and the remaining 1 tablespoon vinaigrette and toss to coat.

Divide the spinach between 2 plates. Top with the balsamic salmon, ¼ cup cubed avocado, 1 tablespoon chopped toasted walnuts, 1 tablespoon toasted sunflower kernels, and 1 tablespoon dried cranberries.
