This Easy Lemon-Ginger Spinach is an amazing side dish. Healthy and vibrant spinach with the slight heat from ginger and zesty lemon juice! Perfect with ham or a nice tender grilled steak.
Start by heating oil in a large pan. Add the ginger and cook while stirring constantly until fragrant. Add the spinach in 2 to 3 batches. Add salt and pepper in the first batch. Use tongs to toss the leaves after each addition. Cook while stirring occasionally until wilted. Remove from the heat and mix in the lemon juice.
To make Easy Lemon-Ginger Spinach, you will need the following ingredients:
Place 2 tablespoons of oil in a large pan over medium heat. Once the oil is shimmering, add 1 tablespoon of ginger and cook, stirring constantly, for about 30 seconds until fragrant.
Add 1½ pounds of spinach in 2-3 batches. Add ½ a teaspoon of kosher salt and ¼ teaspoon of freshly ground black pepper along with the first batch.
Cook the spinach for 3-4 minutes, stirring occasionally until wilted.
Remove the pan from the heat and stir 2 tablespoon of lemon juice.
Serve immediately.
