This easy salad recipe is a snap to put together. I make it on repeat all fall long. To start, this recipe needs hard-boiled eggs and salad croutons. Arrange the sliced eggs and mushrooms, halved cherry tomatoes, croutons, pitted olives, and sliced red onions over the fresh spinach. Next, crisp up some bacon, reserving a few tablespoons of pan drippings. Use the drippings to sauté the onions until soft. Then add in the sugar, ketchup, vinegar, and Worcestershire sauce and bring to a boil. Simmer the dressing until thickened. To serve, sprinkle the salad with bacon and drizzle the bacon dressing over the top. Enjoy!

Assemble salad

Divide 2 cups fresh baby spinach between 2 plates. Arrange 2 hard-boiled eggs, 4 halved tomatoes, 3 sliced fresh mushrooms, ¼ cup salad croutons, 6 pitted olives, and red onion slices over the top.

Cook bacon

In a skillet, cook 4 bacon strips over medium heat until crisp, about 8-10 minutes. Using a slotted spoon, remove the bacon to paper towels. Drain, reserving 2 tablespoons of the pan drippings.

Saute onions

Sauté 1 tablespoon chopped onions in the drippings until tender.

Prepare warm bacon dressing

Stir in 2 tablespoons sugar, 2 tablespoons ketchup, 1 tablespoon red wine vinegar, and 1 tablespoon Worcestershire sauce and bring to a boil. Reduce the heat and simmer, uncovered, until thickened, about 1-2 minutes.
