Recipe Description

I adore these little Mini Plum Tartlets. They are so delicious and so quick and easy to make. I always use ready-rolled puff pastry which means I can have these tartlets in the oven in only 15 minutes. Perfect when someone gives you very little notice that they’re coming around.

I start making these tartlets by preparing the tart filling. Next, I cut the plums in half and remove the stones. I cut out the tart cases using a cookie cutter and place the cream cheese filling in the center. I place some plum slices on top of each one and sprinkle with sugar before baking in the oven. Simple!

    Heat the oven

    Turn on the oven and preheat to 400 ˚F.

    Place 170 grams of cream cheese, 3 tablespoons of confectioners’ sugar, ½ a teaspoon of lemon zest and 1 teaspoon of vanilla extract in a medium-sized bowl. Beat using an electric mixer until smooth and creamy. Set to one side.

    Cut each plum in half and remove the stone. Slice each of the halves into thin slices and set to one side.

    Unroll the pastry sheets and using a 2½-inch round cookie cutter, cut out 18 pastry circles from the pastry. Take a smaller cookie cutter and mark a circle about ¼-inch from the edge of each pastry circle. Prick the pastry of the inner circle using a fork.

    Place about a teaspoon of the cream cheese filling in the center of each pastry circle and spread it out to the edge of the smaller circle. Place slices of plum on top of the cream cheese mixture.

    Brush the pastry edges with beaten egg and sprinkle each one with ½ a teaspoon of demerara sugar.
