Put fresh plums to good use with this easy and delicious Plum Torte recipe. Inspired by the most requested recipe from The NYT Cooking, it’s, too, generously loaded with fresh plums, delicately sweet, and uses simple ingredients. The cake also gets a touch of spice from cinnamon and molasses-y flavor from brown sugar. The best part, though? It’s impossible to mess this recipe up! It always turns out so good.
Start by creaming the butter and sugar in a large bowl with an electric mixer until fluffy and light. Then just add eggs, one at a time, beating well after each addition, and the dry ingredients. With a pestle and mortar, crush the toasted hazelnuts to break them up but not too small, and add them to the batter. Fold in the plum halves and transfer the batter to an 8-inch baking pan. Sprinkle the top with a little sugar and cinnamon and bake the cake for about 40 minutes or until golden. Cool on a wire rack before slicing. You can use more or less sugar in this recipe, depending on the sweetness of your plums and your taste.
