2 sticks Unsalted butter at room temperature and cut into small cubes
3 cups All-purpose flour
⅔ cup Confectioners' sugar
½ tsp Kosher Salt
For the filling
3 lbs (about 6 peaches) Peaches cut into 1/2-inch wedges
1½ cups Brown sugar firmly packed light
of 1 lemon Lemon juice
3 tbsp Cornstarch
2 tsp Vanilla extract pure
1 tsp Cinnamon ground
½ tsp Kosher Salt
¼ tsp Nutmeg freshly grated
For the streusel
¾ cup All-purpose flour
½ cup Almonds sliced skin-on
½ cup Brown sugar firmly packed light
6 tbsp Unsalted butter melted
¼ tsp Kosher Salt

Peach Streusel Slab Pie recipe

This Peach Streusel Slab Pie is a real crowd pleaser and it’s super simple to make too. The beauty of this recipe is that the dough doesn’t even need to be rolled – you simply press it into the baking pan.  

Start by making a dough and pressing it evenly along the bottom of a baking sheet and about ½ an inch up the sides of the pan, filling any gaps. Make the filling and transfer it to the dough crust. Spread it out in an even layer and bake. As the pie bakes, make the streusel topping. Remove the pie from the oven and scatter the streusel evenly over the filling. Return to the oven and bake for 25 to 30 minutes until the topping is bubbling and golden brown. Serve warm or at room temperature.

Steps to make Peach Streusel Slab Pie

    Heat the oven and prepare a rimmed baking sheet

    Preheat the oven to 375 °F and adjust the rack to the bottom third of the oven. Use butter to grease the sides and bottom of a rimmed 10 x 15-inch baking sheet.

    Make the dough

    Combine 2 sticks of butter with 3 cups of flour, ⅔ cup of confectioners' sugar and ½ a teaspoon of salt in a food processor. Process for a few minutes until the mixture comes together in a solid ball.

    Press dough into the baking sheet

    Using your fingers, press the dough along the bottom and ½ inch up the sides of the baking pan. Make sure there are no gaps and set the pan to one side.

    Make the filling

    Mix peach wedges with 1½ cups of brown sugar, the juice of 1 lemon, 3 tablespoons of cornstarch, 2 teaspoons of pure vanilla extract, 1 teaspoon of ground cinnamon, ½ a teaspoon of kosher salt and ¼ teaspoon of freshly grated nutmeg until the cornstarch dissolves fully.

    Spread filling on dough crust

    Place the filling onto the crust and spread out in an even layer.

    Transfer to the preheated oven and bake for 30 minutes.

    Make the streusel

    Meanwhile, mix ¾ cups of all-purpose flour with ½ a cup of almonds, ½ a cup of light brown sugar, 6 tablespoons of melted unsalted butter and ¼ teaspoon of salt in a small bowl until evenly moistened.

    Add streusel topping to the cake

    Remove the pie from the oven and scatter the streusel topping evenly over the filling.

    Return to the oven and continue to bake for 25-30 more minutes until the topping is golden brown and bubbling.
