Desserts are definitely not my speciality, however, this Bourbon-Honey Peach Galette with Buttermilk Crust & Pistachios is just the yummiest dessert pie to make.
With a crisp and crunchy crust made from buttermilk and filled with a gooey honey and peach center and topped with toasted crushed pistachios. Simple and yet just divine.
To make Bourbon-Honey Peach Galette with Buttermilk Crust & Pistachios, you will need the following ingredients:
To prepare the pie crust, start by combining the flour, salt and sugar in a food processor. Pulse a few times, until slightly mixed.
Add butter cubes, randomly, over the dry ingredients mix and pulse a further 10 times until slightly mixed with large chunks remaining.
Pour in the buttermilk and continue pulsating the mix until some of the butter chunks are the size of large peas or smaller.
The prepare dough should be shaggy and moist enough to stick when pinched with your fingers. Place the dough in a disc-shape and wrap tightly with plastic wrap. Refrigerate to chill for at least an hour to overnight.
In a large bowl, combine the peaches, honey, bourbon, cinnamon, and vanilla. Mix to make sure the peaches are well coated.
Roll out the chilled pie dough, remaining on the parchment, into a 10-inch circle. If the dough has warmed, place back in the refrigerator for 10-15 minutes to re-chill.
Sprinkle almond meal over the chilled dough, leaving a 2-inch space around the edges. Arrange the peaches around the center of the dough in a pattern of your choice. Fold the edges of the dough, inwards, covering the fruit slightly, leaving a roughly 9-inch diameter free-form tart. Again, braid your dough as you work your way in.
Remaining on the parchment paper, place galette on a baking sheet and refrigerate for 30 minutes to 1 hour - this helps the pie keep its shape while baking.
Once chilled, preheat oven to 400 °F and remove pie from the freezer. Brush the edges with egg wash and sprinkle with generous amounts of raw sugar.
Bake galette in preheated oven for 30-35 minutes until golden brown and the center juices are bubbling. Once baked, remove from the oven and allow to cool for 10 minutes on the baking sheet before transferring to a cooling rack.
Once mostly cooled, brush with sweet honey and bourbon mixture and sprinkle with chopped pistachios for decoration.
Serve warm or at room temperature with whipped cream or ice cream.
