I made this Honey, Basil & Peach Baked Brie last week when I had a couple of girlfriends over for a glass of wine and a catch up. It was the perfect snack and combined fresh juicy peaches and fragrant basil with the rich creamy baked cheese. Yum!

To make this baked cheese dish, place a wheel of brie in the center of a pan, and sprinkle the chopped peaches on and around the brie. Place in the oven to cook for 10 minutes before switching the oven to the broil setting. Drizzle honey over the peaches and brie and broil until the edges of the brie turn light brown. Transfer the brie to a serving plate, along with any peaches left in the pan. Garnish with basil and drizzle with some more honey, if you like. Serve with crackers.

Steps to make Honey, Basil & Peach Baked Brie

Heat oven and prepare a baking dish

Preheat the oven to 350 °F. Line a baking dish with parchment paper.

Place cheese and peaches in the baking dish

Place the brie in the center of the baking dish and place three chopped peaches on and around the cheese.

Bake

Bake the brie in the oven for 10 minutes.

Broil

Switch the oven to the broil setting. Pour 3 tablespoons of honey over the cheese and peaches. Place under the broiler, approximately 6 inches from the flame. Broil for 3 to 4 minutes, until the edges turn light brown.

Serve

Using a spatula, transfer the baked brie to a serving plate. Place any peaches left in the pan on the plate. Serve garnished with basil and a drizzle of honey, with crackers on the side.
