4 Peaches pitted, peeled and diced
1 tsp Lemon juice
½ tsp Vanilla extract
1 tbsp Cornstarch
2 tsp Agar-agar

What’s more, this recipe uses only vegan ingredients and fresh peaches to give it a healthier spin. To make this easy tart, start by making and baking the tart base. Make sure to prick the crust with a fork in several spots along the bottom to allow the steam to escape while baking. Next, make the filling by blending all the ingredients besides cornstarch and agar-agar in a high-powered blender. Then, combine the mixture with cornstarch and agar-agar and bring to a brief boil. Once the filling is cool, assemble the tart and chill in the refrigerator until set. I usually leave mine overnight. Serve garnished with fresh peach slices, berries, or almond slivers. Steps to make Gluten-Free Pretty Peach Tart

Preheat oven and prepare tart pan

Preheat the oven to 350 °F and lightly grease a tart pan with a removable bottom.

Soak dates

Soak 10 pitted dates in hot water for 5 minutes and then drain.

Combine oat flour and almond flour

In a food processor, combine 3 cups oat flour with 1 cup almond flour.

Add remaining crust ingredients

Add ¼ cup maple syrup, 6 tablespoons melted coconut oil, soaked dates, and 1 teaspoon pink salt. Process until well combined and sticky.

Press into tart pan

Press the dough into the prepared tart pan and prick the crust with a fork.

Bake

Bake for 9-12 minutes. Then remove and leave to cool.

Make filling

In a high-powered blender, combine 1 cup coconut milk, 1 cup unsweetened almond milk, 3 tablespoons sugar, 4 peaches, 1 teaspoon lemon juice, and ½ teaspoon vanilla extract and blend until smooth.

Bring to boil

Pour into a saucepan and add 1 tablespoon cornstarch and 2 teaspoons agar-agar. Stirring constantly, bring the mixture to a brief boil.

Cool

Transfer to a large bowl and leave to cool to room temperature.

Assemble tart and chill
