In a large mixing bowl, whisk together 2 cups Bisquick, 1 cup milk, 2 large eggs, and 1 teaspoon vanilla extract.

Melt about 1 tablespoon butter in a large skillet over medium heat and drop about ÂĽ cup pancake batter onto the skillet. Cook for 2 minutes.

Add pineapple and cherry

Top the pancake with a pineapple ring and add a cherry in the center of it. Sprinkle with some brown sugar and cook until the edges start to bubble, about 1 minute.

Flip and reduce heat

Flip, reduce heat to medium-low, and cook for about 3 minutes or until golden.
