These Quick and Easy Fish Cakes are one of my favorite light meals. I regularly make these with salad and homemade tartar sauce. They are a perfect appetizer when you have guests around too! Try them out soon.

To make these delicious fish cakes, start by placing all of the ingredients in a large mixing bowl and mix them together. Use a fork to break apart the fish, until the ingredients are evenly combined. Shape the mixture into patties. Heat cooking oil to medium-high and fry the fish cakes in batches until golden brown.

Steps to make Quick and Easy Fish Cakes

Make potato cake mixture

Place 1 pound of cooked cod in a large mixing bowl with ¾ cup of panko crumbs, 2 eggs, ¼ cup of thinly sliced green onion, 1 tablespoon of lemon juice, ½ a tablespoon of seafood seasoning, ½ a teaspoon of coarse salt, and ¼ teaspoon black pepper. Mix everything together well using a fork. Break the fish into small pieces with the fork.

Make patties

Take around 2 tablespoons of fish cake mixture and shape it into a fish cake patty. Repeat until all of the mixture is used.

Heat oil

Cover the bottom of a large skillet with a layer of cooking oil. Heat to medium-high.

Cook fish cakes

Fry the fish cakes in batches for about 3 minutes per side, until golden brown on each side.

Serve

Serve warm with a fresh salad and homemade tartar sauce.
