1 tsp Dried oregano
1/4 tsp Salt
1 Lemon medium, thinly sliced
1 Shallots thinly sliced
1/3 cup Olives garlic-stuffed, halved
2 tbsp Water
2 tbsp Olive juice

This Stuffed-Olive Cod recipe couldn’t be easier to make. It is quite frankly delicious too. I invented this recipe by accident one day.  I was trying to think of a novel way to cook cod when I took a look in the refrigerator and some leftover garlic stuffed olives caught my eye. I decided to cook the stuffed olives with the fish and the rest is history!

It couldn’t be easier to make this – simply place everything in a skillet and cook until the fish is flaky. I usually serve this cod dish with a fresh green salad on the side but if you are feeling hungry, you could have steamed potatoes instead. 

To make Stuffed-Olive Cod, you will need the following ingredients:

Steps to make Stuffed-Olive Cod

Place cod in pan

Spray a large non stick skillet with cooking spray. Place four fillets in the skillet.

Add oregano, lemon and shallot

Sprinkle 1 teaspoon of oregano over the fillets and season with salt. Top with lemon slices and a thinly sliced shallot.

Add olives

Sprinkle ⅓ cup of halved stuffed olives around the fish.

Add liquid and bring to a boil

Add 2 tablespoons of water and 2 tablespoons of olive juice. Bring to a boil.

Simmer

Once it comes to a boil, turn the heat down to low and cook gently with a lid on for 8-10 minutes until the fish flakes easily.

Serve

Serve with a side salad or steamed potatoes.

I added 2 teaspoons of salt instead of following the recipe and learned my lesson..I love salt but that turned out to be WAY too much, make sure to follow the recipe exactly how it's written! Also the lemon is a nice touch :)
