2 tbsp Olive oil extra-virgin , divided
2 tsp Red wine vinegar
⅜ tsp Kosher Salt

My Roasted Cherry Tomato Sauce with Spaghetti recipe is a perfect way to use up the glut of tomatoes which comes at the end of every summer! We grow a variety of tomatoes each year in our garden and by far my favorites are the sweet little cherry tomatoes. I am always on the lookout for nice simple recipes which showcase the tomatoes themselves. This is one of those recipes! 

To make this rich flavorsome sauce, start by roasting the tomatoes in a hot oven with some olive oil, vinegar, salt and pepper. Add these to cooked spaghetti and stir in some basil and parsley. Sprinkle with goat cheese and there you have it – a simply delicious Mediterranean style dinner in just half an hour!

Heat the oven

Preheat the oven to 450°F.

Cook the spaghetti

Bring the water to the boil in a large pot or Dutch oven. Add a teaspoon of salt and the spaghetti and cook for about 10 minutes until the spaghetti is al dente. Drain and reserve â…“ cup of the cooking water. Return the spaghetti to the pan and cover to keep warm.

Roast the tomatoes

While the spaghetti is cooking, place the tomatoes in a baking pan and mix with the olive oil, vinegar, ⅜ teaspoon of salt, and pepper. Roast in the oven for 10 minutes until the tomatoes have softened are are slightly charred in places.

Add tomatoes to the spaghetti

Add the contents of the baking pan to the spaghetti. If any of the tomato mixture is stuck to the pan, loosen it with 3 tablespoons of the reserved cooking water and add it to the spaghetti with the remaining tablespoon of oil.

Reheat the spaghetti

Place the spaghetti pot on medium heat and add the remaining cooking water 1 tablespoon at a time until the spaghetti is moist.

Stir in the herbs

Add the basil and parsley and stir well.

Serve

Sprinkle with cheese and serve immmediately.
