Ingredients

½ lb Italian sausage ground
1 Yellow onions minced about ¾ cup
4 Large eggs
2 tbsp Parsley or chives, minced
1 cup Colby Jack cheese divided, grated
¼ cup Whipping cream
¼ tsp Salt
2 Potatoes about 12 oz, peeled and grated
½ tbsp Butter to dot the top, plus more to butter dish

This Sausage, Potato and Egg Skillet is a one-pan breakfast and a wonderful kitchen hack to making weekend breakfast simple yet scrumptious with half the clean up time!

Cooked Italian sausages and onions baked in a scrambled egg mixture with extra cream and cheese, filled with grated potato and topped with sprinkled cheese. We’ve thought of everything in this breakfast recipe.

To make Sausage, Potato and Egg Skillet, you will need the following ingredients:

Steps to make Sausage, Potato and Egg Skillet

Cook sausage

In a large skillet, saute the ground Italian sausage until cooked.

Add onions

Once sausage is cooked, add minced onions and continue cooking for a few minutes until onions are softened and lightly browned in color. Remove from heat and cool for a few minutes.

Prepare egg mixture

In a large mixing bowl, whisk eggs, whipping cream, ½ cup cheese, salt and fresh parsley until well combined. Pour into the skillet of cooked sausage and onions and mix everything together.

Prepare potatoes

Squeeze out excess water from grated potatoes and add to the mixture in the skillet. Mix everything well to combine.

Prepare baking dish

Generously grease a baking dish with butter and add mixture to prepared dish.

Add toppings

Sprinkle remaining cheese over the top and dot with butter in random spots.

Preheat oven

Preheat oven to 375 ÌŠF.

Bake

Bake, uncovered, in the preheated oven for 30-35 minutes until golden brown on top.

So I tried out the gluten free zucchini rice skillet meal before this one and I think this one is better mainly because it's easier, cheaper and the potato does the sausage lots of favors. You can also add a lot to potatos.
