This Savory Zucchini Cheddar Quick Bread recipe is delicious with soup or salad. It is a delicious recipe with star ingredients zucchini and Cheddar. The secret to this recipe is to wrap grated zucchini in a paper towel and squeeze until some of the liquid drains. The zucchini doesn’t need to be completely dried out. Stop once a tablespoon of liquid or so has drained out.  

Prepping this quick bread is really easy too. Start by mixing flour, baking powder, baking soda, and salt. Combine milk and vinegar until the milk curdles a bit. Mix in melted butter and egg. Add the wet mixture to the dry mixture. Take care not to over mix or the bread won’t rise. Next, add grated zucchini, cheese, and onions. Mix until just combined and transfer the batter to a prepared pan. Bake until a toothpick inserted comes out clean. Cool in the pan before removing carefully to cool on a wire rack.

    Heat oven and prepare loaf pan

    Preheat the oven to 350 °F. Grease a 9 x 5-inch loaf pan with non-stick spray.

    Squeeze excess moisture from zucchini

    Wrap 1 ½ cups of grated zucchini in a paper towel. Squeeze until about 1 tablespoon of liquid releases.

    Combine dry ingredients

    In a large bowl, combine 2 cups of all purpose white flour, 2 teaspoons of baking powder, ½ a teaspoon each of baking soda and salt.

    Mix wet ingredients

    In a small bowl, mix together 1 cup of milk and 1 tablespoon of vinegar until the milk starts to curdle. Mix in 3 tablespoons of melted butter and 1 egg.

    Add the wet mixture to the dry ingredients. Take care not to overmix.
