The secret to this recipe is to wrap grated zucchini in a paper towel and squeeze until some of the liquid drains. The zucchini doesn’t need to be completely dried out. Stop once a tablespoon of liquid or so has drained out.
Prepping this quick bread is really easy too. Start by mixing flour, baking powder, baking soda, and salt. Combine milk and vinegar until the milk curdles a bit. Mix in melted butter and egg. Add the wet mixture to the dry mixture. Take care not to over mix or the bread won’t rise. Next, add grated zucchini, cheese, and onions. Mix until just combined and transfer the batter to a prepared pan. Bake until a toothpick inserted comes out clean. Cool in the pan before removing carefully to cool on a wire rack.
