These Spiced Chocolate Chestnut Cookies are the perfect dunking treat. With already one half of the cookie dunked in melted chocolate, the other half is waiting to be dunked in your tea or coffee! Using a healthier alternative to white flour, I chose to use spelt flour instead with almond butter and maple syrup adding to the healthy substitutes.
With a flavor combination of cooked chestnuts, cinnamon, coffee, cardamom, ginger and cloves, dipped in dark chocolate and sprinkled with spicy chili flakes, while the cookie melts, the flavors will be exploding!
To make Spiced Chocolate Chestnut Cookies, you will need the following ingredients:
Preheat the oven to 350 ºF and line a baking sheet with baking parchment paper.
Place the cooked chestnuts in a food processor and pulse a few times until you have a sand-like mixture.
Add spelt flour, chia seeds, cinnamon, instant coffee powder, cardamom, ginger, cloves, cayenne and salt and blend to combine.
Add almond butter and maple syrup to the food processor and blend again until a sticky dough forms.
Scoop out tablespoons of cookie dough and using the palm of your hands, roll into small balls. Arrange on the pre-lined baking sheet. Use a teaspoon or your fingers, flatten cookies slightly.
Bake in preheated oven for 12 minutes.
Remove from heat and allow to cool on a wire rack completely before dipping in chocolate and garnishing.
In the microwave or over the stove top, melt the chocolate.
Once cooled, dip ½ of the cookie in the chocolate so that one side is dipped and the other not. Return to wire rack for chocolate to harden.
Before serving, garnish with sprinkles of cinnamon and Aleppo pepper, if you wish!
