1 tsp Cornstarch
1 tbsp Brown sugar
1 tsp Cinnamon
pinch Vanilla
Lemon juice squeeze, optional
3 Apples small, peeled, cored and chopped
For toast roll-ups:
10 slices Bread gluten-free, if needed
⅓ cup Brown sugar
1 tsp Cinnamon
¼ cup Vegan butter

These easy-to-make Apple Pie Roll-Ups are a great way to mix up your breakfast meals. Warm apples coated with cinnamon-spiced syrup are stuffed into a flattened slice of toast, then rolled up, covered with cinnamon sugar, and baked until crispy. Comforting and delicious, this recipe has a lovely presentation that’s perfect for a holiday table.  

Start by prepping the filling. Peel, core, and chop the apples. Make a syrup on the stove with water, cornstarch, brown sugar, cinnamon, and a squeeze of lemon juice. Stir in the apples and set aside. Next, prepare the bread. Trim off the crusts from the bread slices. Use a rolling pin to roll each slice until flattened. Spread each slice of bread with a layer of apple cinnamon filling. Dip each roll-up into the melted vegan butter, then roll in the cinnamon sugar mixture, making sure to coat well. Finally, bake the roll-ups until crispy and golden brown. Serve warm out of the oven with agave syrup.

Steps to make Apple Pie Roll-Ups

Prepare apple cinnamon filling

In a saucepan, whisk together 100 milliliters water, 1 teaspoon cornstarch, 1 tablespoon brown sugar, 1 teaspoon cinnamon, and a squeeze of lemon juice. Bring to a boil, stirring constantly, until the mixture is thick.

Add apples

Add the chopped apples and toss to coat well. Remove from heat and set aside.

Preheat oven

Preheat the oven to 350 ˚F. Line a baking sheet with parchment paper.

Prepare bread slices

Cut off the crusts from 10 slices of bread. Then flatten each slice using a rolling pin.

Prepare cinnamon sugar and melt butter

In a shallow bowl or deep plate, combine ⅓ cup brown sugar and 1 teaspoon cinnamon. Melt ¼ cup vegan butter and pour it in another shallow bowl.

Place apple filling on bread

Spread about 1-2 tablespoons of the apple pie filling on each flatten toast slice and roll it up into a wrap.

Cover with cinnamon sugar

Brush or dip each toast roll-up first into melted butter and then roll it in the cinnamon sugar.

Arrange roll-ups on baking sheet

Arrange the roll-ups on the prepared baking sheet.
