Apple Zucchini Muffins

I am always on the lookout for healthy treats that I can make for the kids and these Apple Zucchini Muffins tick all the boxes. They are easy to make. They taste delicious and they are full of healthy goodness. These muffins freeze really well, so I I often make a double batch and stick some in the freezer for days when I don’t have time to bake. I am also a fan of putting veggies in my kids treats and they don’t even know they’re eating zucchini! 

To make these muffins, I mix flour, brown sugar, baking soda, baking powder, salt, cinnamon, and all-spice together in a bowl. In a separate bowl, I mix the wet ingredients together. Then I combine the dry and the wet ingredients together. I stir in the zucchini, grated apple and chopped apples – I use Granny Smith apples but you can use whichever apples you prefer. Before I bake these muffins, I sprinkle a mixture of turbinado sugar and cinnamon on top which caramelizes as they cook.

    Heat the oven and prepare a muffin tray

    Preheat the oven to 375 °F. Lightly grease a 12 cup muffin tray with paper muffin cups or low cal cooking spray.

    Combine dry ingredients together

    Mix the flour, brown sugar, baking soda, baking powder, salt, cinnamon, and all-spice together in a large bowl.

    In a separate bowl, mix together the buttermilk, applesauce, oil, egg, and vanilla extract.

    Pour the wet mixture into the bowl with the dry mixture and stir until they are just combined.

    Carefully stir in the zucchini, grated apple and chopped apples.

    Mix the turbinado sugar and cinnamon together in a small bowl.

    Spoon the batter into the muffin tray. Fill each cup about ¾ full. Sprinkle the sugar topping on top of each muffin.
