I regularly make a double batch of these Vegan Banana Bread Breakfast Muffins on a Friday evening to have as a delicious, healthy Saturday breakfast. They’re great to feed the troops before heading out to the various weekend activities we do.

Making these muffins is really easy. I start by processing some oats into flour. I mix these with whole oats, baking powder and cinnamon. Then I mix in some mashed banana, vanilla extract, maple syrup and chocolate chips. Bake for 12 minutes and that’s breakfast sorted. I make a double or triple batch so there’s enough for seconds!
