Of course, you could use a store-bought tzatziki sauce instead. Either will lead to a good salad with Mediterranean flavors that can be served as a side or lunch.
You need just a few ingredients to whip up this fresh-tasting salad recipe. Start with the beets. You need 4 cooked and cooled beets. If you are pressed for time, use pre-cooked vacuum-packed beets as a shortcut. Alternatively, roast or boil your own. Once the beets are cooled, peel and chop them into small cubes. Combine the beets, chopped green onions, and tzatziki sauce in a large bowl. Season with salt and freshly ground black pepper to taste. Now, your salad is ready to serve right away. However, I recommend that you let it rest in the fridge for at least one hour if you can. The salad benefits from sitting around for a bit so the flavors meld and mingle. To serve, transfer the salad to a serving bowl and garnish with fresh dill. Eat and enjoy!
