
My take on Boeuf Salad (Romanian Salad) is interesting because it doesn’t contain any beef! I prefer to use chicken instead as my kids aren’t into eating red meat but this salad is so versatile, you can substitute beef if you prefer. Or leave it out altogether to make a veggie version. I love to serve this salad with my homemade crackers.
Start by cooking the potatoes followed by the carrots, peas and chicken breast until tender. Leave to cool, before chopping the potatoes into small pieces. Chop the carrots, cucumbers and chicken breast into small cubes and combine them with potatoes and peas in a large bowl. Season to taste with salt and pepper. Make the mayonnaise for the dressing by beating yolks and mustard together in a small bowl until thick. Add oil gradually until the mayo comes together. Fold the mayo into the vegetables gently. Transfer the salad to a serving dish before garnishing with black olives and red pepper slices.
