This Heirloom Tomato and Chicken Toss is a really tasty way to use up leftover roast chicken. It’s really healthy too. I always choose really ripe heirloom tomatoes when I make this salad. I love heirloom tomatoes for their weird and wonderful shapes and flavors. I always try to pick up a variety of different colors too if possible.
To make this salad couldn’t be easier – I whisk up a quick dressing of vinegar, olive oil, sugar, salt and pepper. Then I mix it with chicken, tomatoes, onion, basil, chives, parsley, and thyme together in one of my favorite salad bowls. Hey presto – a delicious salad ready in only 10 minutes!

This Tomato and Chicken Toss is so easy to whip up! I made it with my hubby for dinner last week, and it was a hit. Ripe tomatoes are my favorite
Amazing salad! Fresh ingredients made my family so happy. I whipped this up after a long day, and the kids devoured it. The heirloom tomatoes were a hit!
I personally cut back on the tomatoes and used sun dried ones.
Parsley really stood out in the toss and overwhelmed the rest of the flavors.
