Cauliflower “Fried Rice”

This Cauliflower “Fried Rice” is a fantastic fakeaway meal – you know when you are craving take-out but don’t fancy the calories! Then you just have to fake it! This “fried rice” is a super low-carb side dish when you are craving Chinese take-out!

To make this dish, start by pulsing cauliflower in a food processor until it resembles rice. Beat egg and egg whites in a small bowl with a fork. Season with salt. Heat oil in a wok. Add the eggs and cook, turning a few times until set. Remove and set aside. Add sesame oil to the wok and stir fry onions, scallion whites, peas, and carrots and garlic. Increase the heat to medium-high and add the cauliflower “rice” and soy sauce. Mix, cover and cook while stirring frequently, until the cauliflower is slightly crispy on the outside but tender on the inside. Return the egg to the wok. Remove from the heat and mix in reserved scallion greens.

    Remove the core from a head of cauliflower and let dry completely. Cut into florets. Working in batches, pulse the cauliflower florets in a food processor until they have the texture of couscous.

    Combine 1 large egg and 2 egg whites in a small bowl. Beat with a fork and season with a pinch of salt.

    Place a large saute pan or wok over medium heat. Spray with oil and add the beaten eggs. Cook while turning a few times until set. Remove from the pan and set aside.

    Add 1 tablespoon of sesame oil to the wok. Add onions, scallion whites, peas, carrots, and garlic and stir fry for about 3-4 minutes until soft. Increase the heat to medium-high.

    Add cauliflower rice to the wok with 3 tablespoons of soy sauce. Mix, cover and cook for about 5-6 minutes, stirring frequently, until the cauliflower is slightly crispy on the outside but tender on the inside.
