1 head Cauliflower medium to large, or 16-oz store-bought cauliflower rice
½ cup Almonds sliced
2 tbsp Olive oil extra-virgin
2 cloves Garlic pressed or minced
Pinch of Red pepper flakes
¼ tsp Sea salt fine
½ cup Parsley chopped flat-leaf
1 tbsp Lemon juice
Black pepper to taste

Mediterranean Cauliflower Rice


I love this Mediterranean Cauliflower Rice side dish. It is so simple to prepare and tastes absolutely delicious. If you don’t have or can’t find cauliflower rice, it is really easy to make yourself once you have a head of cauliflower. Simply chop the cauliflower head into medium chunks and throw out the core. Place the chunks in a food processor and chop with the S-blade until they’re broken into tiny pieces, just bigger than couscous.

To make this dish, start by toasting almonds until fragrant and starting to turn golden on the edges. Cook garlic and add cauliflower rice, red pepper flakes, and salt and stir to combine. Once the rice is cooked and turning golden in places, remove the skillet from the heat. Stir in toasted almonds, parsley, and lemon juice. Season to taste with salt and pepper and serve warm.

Steps to make Mediterranean Cauliflower Rice


Make cauliflower rice


Cut a head of cauliflower into medium chunks and discard the core. Work in batches, to pulse the cauliflower chunks in a food processor until they are in pieces, just bigger than couscous.


Squeeze excess water


Wrap the cauliflower rice in a clean tea towel. Twist and squeeze the towel to remove as much water as possible from the rice.


Toast almonds


Place ½ cup of almonds in a large skillet over medium heat. Stir frequently for 3 - 5 minutes until the almonds are fragrant and starting to turn golden at the edges. Transfer to a bowl to cool.


Cook garlic


Place the skillet over medium heat and add 2 tablespoons of olive oil and 2 minced cloves of garlic. Cook while stirring for 10 - 20 seconds until the garlic is fragrant.


Cook cauliflower rice


Add cauliflower rice to the skillet and add a pinch of red pepper flakes and ¼ teaspoon of salt. Stir to combine and cook for 6-10 minutes while stirring every minute or so, until the cauliflower rice is hot and starting to turn golden in places.


Add almonds and season


Remove the skillet from the heat and stir through the toasted almonds, ½ a cup of parsley, and 1 tablespoon of lemon juice. Season to taste with salt and pepper



Serve warm.
