Mediterranean Cauliflower Rice
I love this Mediterranean Cauliflower Rice side dish. It is so simple to prepare and tastes absolutely delicious. If you don’t have or can’t find cauliflower rice, it is really easy to make yourself once you have a head of cauliflower. Simply chop the cauliflower head into medium chunks and throw out the core. Place the chunks in a food processor and chop with the S-blade until they’re broken into tiny pieces, just bigger than couscous.
To make this dish, start by toasting almonds until fragrant and starting to turn golden on the edges. Cook garlic and add cauliflower rice, red pepper flakes, and salt and stir to combine. Once the rice is cooked and turning golden in places, remove the skillet from the heat. Stir in toasted almonds, parsley, and lemon juice. Season to taste with salt and pepper and serve warm.
