To make this dish, start by mixing all of the meatloaf ingredients until well combined. Place in a loaf pan or shape into free form loaf and place on a parchment lined sheet pan. Bake in the oven. As the meatloaf bakes, make the mushroom gravy by sauteing mushrooms and adding cornflour, beef broth and Worcestershire sauce. Cook while stirring constantly, until slightly thickened. Taste for seasoning and adjust to taste with salt and pepper.

Place 1 pound of finely chopped button mushrooms in a large mixing bowl with 1 pound of ground meat, 1 teaspoon each of minced fresh thyme and onion powder, 1 tablespoon each of minced fresh Italian parsley, Worcestershire sauce and fresh minced garlic, 1 cup of fresh bread crumbs, ½ a cup of whole milk, 2 lightly beaten eggs, 2 teaspoons of kosher salt and ½ a teaspoon of black pepper. Mix well until fully combined.
