This Chicken and Bulgur Salad With Peaches is one of my all time favorite salads. I love the charred flavor of the grilled chicken and how it combines with fresh juicy peaches and the slight nuttiness of the bulgur wheat.
To make this salad I start by cooking the bulgur wheat. While this is cooking, I season the chicken breasts and grill them on a grill pan. I assemble the salad by mixing the bulgur, arugula, tomatoes, and peaches in a large bowl with a light dressing of salt, oil, and vinegar. Delicious!
To make my Chicken and Bulgur Salad With Peaches, you will need the following ingredients:
Spray the grill pan with cooking spray and preheat to high.
Bring water and bulgur to a boil in a saucepan over high heat. Once boiling, turn the heat down to medium-low. Cover and simmer for about 10 minutes.
While the bulgur is cooking, season the chicken with salt and pepper to taste. Grill on both sides, turning occasionally until cooked through.
Remove the chicken from the pan and place it on a cutting board. Allow to stand for around 3 minutes, then slice into thin strips.
In a large salad bowl, mix the cooked bulgur, arugula, tomatoes, and peaches with the remaining salt, oil, and vinegar. Toss well to coat.
Serve the salad on 4 plates. Place the chicken slices on top.
