Ingredients

For the tacos
2 tbsp Olive oil
½ cup Red bell pepper diced
½ cup Green bell pepper diced
½ cup Onion chopped
to taste Kosher Salt
to taste Black pepper freshly ground
2 cloves Garlic grated on a rasp or minced
2 tsp Cumin ground
½ tsp Ground coriander
¼ tsp Cayenne pepper
1 tbsp Seasoning sazon
1 lb Chicken ground
2 tsp All-purpose flour
1 cup Chicken stock
12 shells Taco kept warm in a 200 degree oven
Lettuce shredded, for serving, to taste
For the creamy salsa
4 Tomatoes Roma, seeded and chopped
½ cup Cilantro chopped fresh leaves
¼ cup Red onion finely chopped
1 Jalapeño pepper seeded and finely chopped
1 Scallions finely chopped
1 cup Sour cream
1 tbsp Hot sauce
½ tsp Garlic powder
2 tsp Lime juice fresh
Kosher Salt to taste
Black pepper freshly ground, to taste

I love to make these tacos for friends because not only do they taste absolutely delicious, they are super simple to make too! When I make these, I place everything in the center of the table and let everyone build their own taco!

Steps to make Ground Chicken Tacos with Creamy Salsa

Make the salsa

Mix the tomatoes, red onion, jalapeno, cilantro, scallions, hot sauce, sour cream, garlic powder, and lime juice together in a medium-large bowl. Season to taste with salt and pepper. Chill in the refrigerator for 1 hour.

Heat the oil

In a large pan or skillet, heat the olive oil over medium-high heat.

Sauté the peppers and onion

Fry the green and red bell peppers and onions in the oil until they are tender. Season to taste with salt and black pepper.

Add the flavorings

Add the garlic, cumin, coriander, cayenne pepper, and sazon seasoning and cook for about 1 minute.

Cook the chicken

Add the ground chicken to the pan and cook while stirring. As you stir, break up any big lumps of ground chicken.

Sprinkle in flour

When the chicken is cooked through, sprinkle over the flour and stir well. Allow to cook for 1-2 minutes.

Pour in chicken stock

Pour the chicken stock into the pan. Increase the heat and bring the sauce to a simmer. Cook for 4-5 minutes until the sauce thickens.

Serve

Place the tacos, chicken mixture, shredded lettuce and creamy salsa in the center of the table and allow everyone to build their own taco or spoon the chicken into warm taco shells and top with creamy salsa and lettuce.
