12 oz Skirt Steak
2 oz Blue cheese at room temperature
4 x 10 inch Tortilla wraps
2 cups Baby spinach or arugula

I use skirt steak when I make these Steak Bistro Wraps. Skirt steak is a long, flat piece of steak which is rich and full of flavor. It goes so well with grilled red onion and creamy blue cheese. I often make this as a midweek treat for me and my husband. He loves these wraps and I love how quick and simple they are. 

These wraps are super quick to make which makes them a great choice for a midweek meal when you don’t have much time to spend in the kitchen. Start by grilling the red onions and tossing them with balsamic vinegar. Grill the steak to your required doneness. I like mine medium rare. Assemble the wraps by spreading blue cheese on them and topping with the grilled steak, onions and spinach. Enjoy!

Steps to make Steak Bistro Wraps

Heat the grill pan

Preheat the grill pan to medium-high.

Season the onions

Season red onion slices with salt and pepper.

Grill the onions

Grill the onion slices for 3-4 minutes per side until tender.

Mix onions with balsamic vinegar

Transfer the cooked onions to a bowl and toss with balsamic vinegar.

Season steak

Season the steak with salt and pepper.

Grill on each side for 3-4 minutes (for medium rare).

Rest the steak before slicing

Allow the steak to rest for a few minutes before slicing.

Assemble the wraps

Smear blue cheese on each of the wraps and place the spinach, steak, and red onion on the cheese. Drizzle over the remaining vinegar. Roll up tightly.

Serve

Slice in half and devour immediately.
