2 large or 4 small Shallots
4 cloves Garlic
2 ¼ lbs Potatoes 4 medium or 3 large)
4 tbsp Coconut oil refined coconut oil (or olive oil)
6 tbsp All-purpose flour or gluten free flour
2 cups Vegetable broth
4 cups Oat Milk plain milk, divided
1¼ tsp Kosher Salt plus more to taste
2 tsp Old bay seasoning

Chives to taste
Green onion to taste
Orange bell pepper to taste
Hot sauce to taste

Creamy Vegan Potato Soup


This Creamy Vegan Potato Soup is absolutely delicious, and it is so simple to make too! This soup is quite mild in flavor, so I like to go wild with the toppings. Some of my favorite toppings include vegan yogurt, thinly sliced green onions, chives, orange bell pepper, vegan bacon and hot sauce.

To make this delicious creamy soup, start by cooking shallots and garlic. Add flour and vegetable broth. Once incorporated, add oat milk, potatoes, kosher salt, and Old Bay seasoning. Cook until the soup becomes creamy and the potatoes fall apart when you mash one against the side of the pot with your spoon. Using a potato masher, break up the potatoes so that a creamy but chunky texture forms. Stir to incorporate and serve with your favorite toppings.

Steps to make Creamy Vegan Potato Soup


Prepare vegetables


Mince 2 large or 4 small shallots. Mince 4 garlic cloves and peel and dice the potatoes into small cubes.


Brown shallots and garlic


Heat 4 tablespoons of coconut oil over medium heat. Add the chopped shallots and garlic and cook for 2 minutes. Shake 6 tablespoons of flour over the shallots. Cook while stirring for 2-3 minutes until the shallots start to brown.


Add remaining soup ingredients


Pour in 2 cups of vegetable broth gradually. Stir until mostly smooth. Once incorporated, add 4 cups of oat milk, the diced potatoes, 1¼ teaspoons of kosher salt and 2 teaspoons of Old Bay seasoning.


Simmer soup


Bring the soup to a simmer. Cook on low for 20-25 minutes. Stir often and scrape the bottom to make sure nothing sticks. Keep stirring or a skin will form on the top.


Mash potatoes


Remove the soup from the heat. Using a potato masher, break up the potatoes so that a creamy but chunky texture forms. Stir to incorporate the mashed potatoes.




Serve topped with a selection of your favorite toppings.
