To make this delicious creamy soup, start by cooking shallots and garlic. Add flour and vegetable broth. Once incorporated, add oat milk, potatoes, kosher salt, and Old Bay seasoning. Cook until the soup becomes creamy and the potatoes fall apart when you mash one against the side of the pot with your spoon. Using a potato masher, break up the potatoes so that a creamy but chunky texture forms. Stir to incorporate and serve with your favorite toppings.
