These Garlic Butter Meatballs with Zoodles are a delicious way to serve ground chicken. I like to make this meatball dish with zoodles rather than spaghetti. What are zoodles you ask? Well, zoodles are noodles made from zucchini! They are a fresh and low carb alternative to pasta. I buy my zoodles in my local grocery store, but you can make your own if you buy a handy little gadget called a spiralizer.

This dish is really easy to make too which makes it a perfect midweek meal choice. Start by mixing the chicken, 2 garlic cloves, egg, parmesan, parsley, and red pepper flakes together in a large bowl. Form the mixture into tablespoon sized meatballs. To cook the zoodles, melt butter in a large pan and add the remaining garlic. Toss the zoodles and add the meatballs back in. Serve garnish with extra parmesan. Delicious!

Steps to make Garlic Butter Meatballs with Zoodles

Make the meatball mixture

Place the 1 lb of ground chicken in a large bowl and mix in 2 of the garlic cloves, 1 beaten egg, ½ cup of parmesan cheese, 2 tablespoons of parsley, and ¼ teaspoon of red pepper. Mix the ingredients together well using your hands.

Shape the meatballs

Season the meatball mixture with salt and pepper to taste. Using your hands, form tablespoon sized meatballs.

Cook the meatballs

Heat 2 tablespoons of oil in a large pan and cook the meatballs in the pan for about 10 minutes until they are golden brown all over and cooked through.

Transfer meatballs to a plate

Place the meatballs on a plate and set to one side. Wipe out the pan with a paper towel.

Melt butter with garlic

Melt 4 tablespoons of butter in the same pan and then add the three remaining garlic cloves. Cook for about 1 minute until the garlic is fragrant.

Cook zoodles

Add the zoodles to the pan. Toss the zoodles well until they are coated with garlic butter. Squeeze in the lemon juice.

Add the meatballs

Add the meatballs to the pan and cook until they are warmed through.

Serve

Serve garnished with grated parmesan.
