1 cup White rice long-grain
1 tbsp Canola oil
1 lb Ground pork
2 cloves Garlic finely chopped
2 tbsp Ginger fresh, grated
2 tbsp Lime juice fresh
1 Red chili small red chili (seeded if desired), finely chopped
1 tbsp Soy sauce low-sodium
FOR THE DRESSING:
½ tbsp Ginger fresh, grated
1 tbsp Soy sauce low-sodium
2 tbsp Lime juice fresh
1 tsp Brown sugar
FOR THE CUCUMBER SALAD:
1 English cucumber thinly sliced
2 Scallions thinly sliced
1 cup Cilantro fresh
1/2 cup Fresh mint

    This Ginger Pork and Cucumber Salad with Mint is definitely one of my favorite dishes of all time. Juicy ground pork, cooked with Asian infused spices and flavors of garlic, red chili, ginger and soya sauce served with a cool mint and cilantro cucumber salad to perfectly balance out the heat.

    All you need is a portion of fluffy, long-grain white rice to complete this dish. It’s wonderful.

    Steps to make Ginger Pork and Cucumber Salad with Mint

    Brown pork

    In a cast-iron skillet, heat canola oil, and cook ground pork for 7 minutes, until browned.

    Add seasoning

    Add garlic, red chili and 2 tablespoons fresh ginger. Toss well to coat.

    Add sauce

    Remove from the heat and drizzle 2 tablespoons lime juice and 1 tablespoon soya sauce. (If dry, add ¼ cup water).

    Prepare dressing for cucumber

    Gently stir 2 tablespoons lime juice, 1 tablespoon soya sauce, ½ tablespoons ginger and brown sugar.

    Prepare cucumber salad

    Pour dressing over the cucumber and scallions and toss well to coat. Add cilantro and mint and combine.

    Serve the pork over white rice with the cucumber salad side.
