You can also use a blender or food processor instead. Besides, you can whip up the dressing ahead, and store it in an airtight container. It will keep well for up to 4 days in the fridge. For this salad, you can use any mixed greens you love most. For the toss-ins, I use my favorite juicy cherry tomatoes, along with silky avocado, and any kind of leftover cooked chicken.
