Ingredients

For Coleslaw:
2 cups Green cabbage sliced thinly
2 cups Red cabbage sliced thinly
2 cups Carrots grated
1 tsp Kosher Salt
½ cup Red onion chopped or sliced thinly
½ cup Parsley chopped
1 Jalapeño pepper seeded and chopped
1 tsp Celery seed
½ cup Walnuts lightly toasted
For No Mayo Coleslaw Dressing:
¼ cup Olive oil extra virgin
2 tbsp Lemon juice
2 tbsp Apple cider vinegar
1 Garlic clove minced
1 tsp Kosher Salt
¼ tsp Black pepper ground

This Vegan No Mayo Coleslaw is so delicious Рyou will want to make it all the time! It is made using red and green cabbage, carrots, red onion, and jalape̱o and dressing with a homemade sugar-free olive oil and vinegar dressing. This slaw is the perfect dish to pack for your next party, potluck or picnic!

To make this, start by placing green cabbage, red cabbage and grated carrot in a bowl.
Add onion, parsley, jalapeno and celery seed. Toss gently to combine. Make the dressing by placing olive oil, lemon juice, vinegar, garlic, salt and pepper in a mason jar. Place the lid on top and give the jar a good shake. Dress the salad and toss to coat. Sprinkle with walnuts and serve. Yum!

Steps to make Vegan No Mayo Coleslaw

Assemble the slaw

Place 2 cups of thinly sliced green cabbage in a bowl with 2 cups of thinly sliced red cabbage and 2 cups of grated carrots. Mix well to combine.

Add ½ cup of sliced red onion, ½ cup of chopped parsley, jalapeño and celery seed. Toss well to distribute fully.

Make dressing

Place ¼ cup of extra virgin olive oil, 2 tablespoons of lemon juice, 2 tablespoons of apple cider vinegar, 1 clove of minced garlic, 1 teaspoon of kosher salt, and ¼ teaspoon of ground black pepper in a mason jar. Place the lid on the jar tightly and shake vigorously.

Dress the coleslaw

Pour the dressing over the coleslaw and toss to combine.

Serve

Just before serving, sprinkle with walnuts.
