Multi Vegetable Salad

I place a version of this Multi Vegetable Salad on the table every day in summer. The best way to consume vegetables on a hot sunny day is to have them in a cold, crisp salad. I often add salami or bologna to this salad when I make it. It adds an extra level of saltiness. Simply leave out the meat if you want to make the salad vegetarian.

It’s super simple to make too. Shred, slice or dice all the ingredients finely so that every element of the salad is a similar size. Make a dressing of mayonnaise and ketchup in a small bowl. Shortly before you are ready to serve the salad, combine the ingredients in a large serving bowl and stir through the dressing. Serve immediately.

Steps to make Multi Vegetable Salad

Slice cabbage

Slice ¼ cabbage into very fine strips.

Slice remaining ingredients

Slice or chop 1 small beet, ¼ cauliflower, 3 small tomatoes, 1 bunch of radishes, 1 pound of sausage salami or bologna, 1 carrot, 2 cucumbers, and 1 bell pepper into a similar size as the cabbage.

Make dressing

Combine 1 cup of mayonnaise with â…“ cup of ketchup in a small bowl.

Assemble the salad

When you are already to serve, combine all ingredients in a large serving bowl.

Dress salad

Stir the dressing into the salad until all ingredients are evenly coated.

Serve

Serve immediately.

I don't really like beets so that was the only flaw as far as it comes to my preferences, generally I liked but i'm sticking to the pomegrante fruit salad!
