This Best Healthy Coleslaw Ever (No Mayo) is the best vegan coleslaw recipe ever. I love the combination of purple cabbage, carrots and cilantro with a slight kick from jalapeño. The tangy dressing doesn’t contain any mayo making this a vegan delight!
To make this, place shredded fresh purple cabbage, carrots, cilantro, green onion, and jalapeño in a large bowl. Make a dressing from olive oil, cider vinegar, maple syrup, garlic salt, and pepper. Pour the dressing over the veggies and place in the refrigerator to chill. Toast pepitas and sliced almonds and mix them through the slaw just before you’re ready to serve.
