Steps to make Guinness Chocolate Puddings

Prepare ramekins

Generously grease 4 9x5 cm ramekins with some butter. Set aside.

Combine butter and chocolate

In a heatproof bowl set over a small pan of low-simmering water, slowly stir 150 g of unsalted butter with 200 g of dark chocolate and a pinch of salt until melted and combined. Remove from heat and allow it to cool a little.

Combine sugar and eggs

In a large mixing bowl, use an electric whisk to beat 90 g of castor sugar and 3 large eggs together until pale, thick and almost doubled in volume.

Add Guinness and melted chocolate

Gently fold in the melted chocolate mixture along with 90 ml of Guinness until just combined.

Chill

Spoon the mixture into the prepared ramekins and place in the refrigerator for about 1 hour to chill.

Preheat oven

Preheat the oven to 200 °C/180 °C fan/gas 6 and place a baking tray on the top shelf.

Bake

Once chilled, bake the puddings in the preheated oven for 18 minutes then immediately remove from the oven and set to stand for a minute.

Serve

Serve warm with cream or ice cream, if you wish!

I accidently used salted butter but it doesn't change much and was still edible so don't worry if you made the same mistake as I did, the pudding should still taste the same :)
