To make this fantastic side dish, start by frying bacon until crispy. Once cool, crumble. Steam cauliflower until tender. In a large bowl, combine sour cream, mayonnaise, ranch seasoning, black pepper and add the steamed cauliflower florets, ½ the bacon, cheddar cheese and green onion. Mix well and transfer to a baking dish. Top the casserole with colby jack cheeses and the rest of the bacon. Bake in the oven until the cheese is bubbling and beginning to brown. Serve garnished with the remaining green onion.
