This Loaded Cauliflower Casserole is one of the best Christmas side dish recipes you will find this year! It’s low carb and absolutely delicious – a combination of cauliflower, cheese and a creamy dressing made from mayo, sour cream and ranch seasoning. Oh and don’t forget the secret ingredient – crispy, crumbled bacon!

To make this fantastic side dish, start by frying bacon until crispy. Once cool, crumble. Steam cauliflower until tender. In a large bowl, combine sour cream, mayonnaise, ranch seasoning, black pepper and add the steamed cauliflower florets, ½ the bacon, cheddar cheese and green onion. Mix well and transfer to a baking dish. Top the casserole with colby jack cheeses and the rest of the bacon. Bake in the oven until the cheese is bubbling and beginning to brown. Serve garnished with the remaining green onion.

    Preheat the oven to 375 °F. Lightly grease a 11×7 inch baking dish with non-stick cooking spray.

    In a large skillet, fry 8 slices of bacon until crispy. Once cool, crumble and set aside.

    Steam 1 large head of cauliflower florets for about 15-20 minutes until tender.

    In a large bowl, mix ½ a cup of sour cream with ½ a cup of mayonnaise, 1 tablespoon of ranch seasoning in a large bowl and season with ¼ teaspoon of black pepper.
