I love to make these Mincemeat Pop Tarts around Christmas time when I know people will be dropping by unexpectedly! I would hate to be caught without a sweet treat to offer my guests with a cup of coffee or a glass of mulled wine!
I cheat a little when I make these pop tarts because I use ready rolled shortcrust pastry instead of making my own. Life is too short to make your own pastry – am I right?! I start by cutting the sheet of pastry into 24 squares. I pop a heaped teaspoon of mincemeat in the center of 12 of the squares and I use the other 12 to top the tarts. Bake and dust with icing sugar before serving.
To make Mincemeat Pop Tarts, you will need the following ingredients:
Turn on the oven and preheat to 400 ˚F. Line a baking sheet with parchment paper.
Unroll the pastry sheet and cut it into 24 equal sized squares. Make a small incision in the top of each 12 squares with a mold or a knife.
Place a heaped teaspoon of mincemeat in the center of 12 of the pastry squares.
Brush the edges of the pastry with egg wash. Place the remaining 12 pieces of pastry gently on top. Press down gently around the edges to seal, then use a fork to seal.
Place each pop tart on a lined tray. Brush the tops with more beaten egg. Sprinkle with caster sugar.
Bake for 18-20 mins until crisp and golden brown. Cool slightly on a wire rack.
Serve warm, dusted with icing sugar!
