Mincemeat Pop Tarts

Recipe Description

I love to make these Mincemeat Pop Tarts around Christmas time when I know people will be dropping by unexpectedly! I would hate to be caught without a sweet treat to offer my guests with a cup of coffee or a glass of mulled wine!

I cheat a little when I make these pop tarts because I use ready rolled shortcrust pastry instead of making my own. Life is too short to make your own pastry – am I right?! I start by cutting the sheet of pastry into 24 squares. I pop a heaped teaspoon of mincemeat in the center of 12 of the squares and I use the other 12 to top the tarts. Bake and dust with icing sugar before serving.

These Mincemeat Pop Tarts are a big win for my family! I whip 'em up when friends drop by during the holidays. Using ready rolled pastry is a game changer. My kids love helping with the mincemeat. Plus, who doesn't love something sweet with their mulled wine? Definitely gonna keep making these!
