Jam-Filled Thumbprint Cookies
These Jam-Filled Thumbprint Cookies are really cute bite-size cookies. I like to add assorted jam flavors to my thumbprint cookies – usually blackberry, apricot or strawberry. I like to make these with my kids when they are off school. They love getting messy and involved in the kitchen!
To make these, I start by beating butter and sugar. Then I add egg yolk, vanilla extract, flour and salt and beat until the dough comes together in a ball. I then shape the cookie dough into balls and press my thumb into the center of each one. I start baking them in the oven and after about 10 minutes, I remove the baking sheet from the oven and add jam to each thumbprint. I bake for a few more minutes until cooked. Cool completely before enjoying with a glass of milk.

My daughter is a huge fan of these jam filled cookies, she likes them more than the pistachio cookies which are my favorite.
I didn't want a mixture of different jams so I went with blueberry jam only and these turned out sooo good.
