I am always looking for new easy Halloween-themed recipes to make with my kids at this time of year. And these Pumpkin Sushi Rice Balls perfectly fit the bill. Dainty rice balls with cucumber and salmon not only make a perfect snack but also are very fun and easy to make with kids.

Start by cooking the sushi rice. Use a round cookie cutter to cut out salmon circles and scissors to cut out triangular shapes for eyes and mouth out of the nori seaweed sheet. Once the rice has cooled, roll portions of it into balls, placing a piece of cucumber in the center. Cover each rice ball with salmon and decorate with seaweed eyes and mouth. Place a piece of coriander stalk for a pumpkin stem. Serve these cute mini sushi balls with a small bowl of soy sauce for dipping.

    Cook 300 grams sushi rice according to package instructions. Set aside to cool.

    Wet your hands and spoon about 1 tablespoon rice in the palm of your hand and add a cucumber cube in the center. Add another tablespoon of rice on top and roll the rice around the cucumber to form a solid rice ball. Repeat until you have 12 rice balls.

    Use a 2-inch round cookie cutter, to cut the salmon into 12 circles. Add a slice of salmon on top of each rice ball.
