Steps to make Butternut Squash and Walnut Soup

Sauté garlic and onion

In a large pot, heat 1 tablespoon olive oil and add ½ diced onion and 2 minced garlic cloves. Sauté until the onions are translucent, about 5 minutes.

Add butternut squash, broth, and cream

Add 1 cubed butternut squash, 32 ounces broth, and ½ cup heavy cream and bring to a boil.

Lower the heat, cover, and simmer until the squash is soft, about 15-20 minutes.

Pour the soup into a blender and add ½ cup toasted walnuts and 2 teaspoons salt or to taste. Blend until creamy and smooth.

Create spider web

Pour the soup into bowls. Fill a plastic bag with ½ cup sour cream and cut a small corner off. Pipe three concentric circles on top of each soup bowl. Using a wooden skewer or knife, drag lines from the center to the outside to form a spider web. Top each bowl with a walnut half.
