½ tsp Kosher Salt
For Zosui:
6 oz Chicken thighs boneless, skinless, chopped in bite-sized pieces
1 inch Carrots thinly sliced
2 Shiitake mushrooms stalks removed, caps thinly sliced
2 Green onion or scallions, thinly sliced
1 ½ cups Cooked rice Japanese short-grain
1 Large eggs beaten in a small bowl
½ tsp Sesame seeds toasted white
⅛ tsp White pepper powder

This Zosui – Japanese Rice Soup is a delicious dashi broth typically made with vegetables, eggs, mushrooms, and meat or seafood. It’s a comforting and nourishing meal that helps refuel your energy. Dashi is the stock that forms the base for Japanese soups like miso. In this recipe, I use a packet of dashi to make the broth, so it is super quick to prepare. 

To make this soup, start by preparing the dashi broth. Chop the chicken and thinly slice the shiitake mushroom caps. Thinly slice the green onions and carrot. Add the chicken to the broth and bring to boil. Add carrot, soy sauce, and mushrooms. Beat the egg in a bowl and slowly drizzle a small amount over the soup surface. This will create a fluffy texture. Add some green onion, sesame seeds, and white pepper powder. Cover the pot with the lid and bring to the table to serve in individual bowls.

Steps to make Zosui – Japanese Rice Soup

Prepare the dashi

Mix 1 packet of dashi stock with 3 cups of water. Bring to a boil.

Rinse rice

If you are using leftover cold cooked rice, place it in a fine-mesh sieve and rinse under running water to remove any excess starch. Shake the rice and drain well. Skip this step if you’re using freshly made rice.

Add chicken to broth

Add the chopped chicken to the hot broth. Cover the pot and bring it to boil on medium-low heat. Once boiling, skim any scum from the surface.

Add carrot

Add the thinly sliced carrot and cook with the cover on for about 4-5 minutes until tender.

Add soy sauce, rice, and mushrooms

Add 2 teaspoons of soy sauce to the broth and season with salt. Add the sliced shiitake mushrooms and well-drained cooked rice. Cover and continue to cook for 10 minutes.

Pour in beaten egg

Drizzle a small amount of the beaten egg slowly over the surface of the broth until it has a fluffy texture.

Add remaining ingredients

Sprinkle the green onion and sesame seeds on top and season with white pepper powder.

Serve

Cover the pot with the lid and bring to the table to serve in individual soup bowls.
