1 cup Hot sauce
½ cup Molasses
4 tbsp Unsalted butter
For the Wings:
2 tbsp light Brown sugar
1 tbsp Kosher Salt
2 tsp Garlic powder
2 tsp Smoked Paprika
2 tsp Black pepper freshly ground
¾ cup Olive oil plus extra for oiling the grill
3 pounds Chicken wings whole
½ cup Scallions thinly sliced , optional
2 tbsp Parsley fresh , chopped , optional

I think I’ve found the best wings recipe with this Sea Island Wings recipe. Hot sauce, sweetened with molasses and bound with butter.

Cook on a hot griddle in a homemade basting rub made from a combination of light brown sugar, salt, garlic powder, smoked paprika, pepper and olive oil. Tossed in hot sauce and garnished with scallion slices and fresh parsley for an extra touch.

Preheat grill

Preheat the grill or grill pan to medium-high heat.

Prepare hot sauce

In a mixing bowl, whisk together 1 cup of hot sauce, ½ cup of molasses and 4 tablespoons of unsalted butter.

Heat hot sauce

Heat the hot sauce over medium-high heat until well combined and heated through. Set aside.

Prepare wings coating

In a separate mixing bowl, combine 2 tablespoons of light brown sugar with 1 tablespoon of kosher salt, 2 teaspoons of garlic powder, 2 teaspoons of smoked paprika and 2 teaspoons of pepper then whisk in ¾ cup of olive oil until a smooth rub for coating, forms. Set a quarter of the prepared coating aside for further brushing.

Generously coat the wings all over with the prepared coating.

Cook wings

Grease the grill with some olive oil then place the wings on top. Cook and close the grill for about 10 minutes then add more of the prepared coating. Flip the wings, recoat with the remaining rub and cook for another 15 minutes.

Add hot sauce

Once completely cooked, transfer the wings to a large mixing bowl and pour the hot sauce over. Toss to coat well.

Serve

Serve on a platter with sprinkles of scallions and parsley for garnish.
