3 tbsp Fresh dill minced
1 tbsp Powdered ranch dressing mix

Dilly Cucumber Bites recipe

I always make a few batches of these Dilly Cucumber Bites as appetizers when I have a cocktail party. They are fresh and suitable for your vegetarian guests. Meat eaters will love them too so it’s a win win! 

To make these, start by slicing cucumbers into ½-inch thick rounds. You can leave the skin on, peel them, or partially peel them for a striped look. Mix cream cheese, Greek yogurt, dill and ranch dressing powder. Place the cheese mixture in a piping bag, I didn’t have one last time I made these, so I improvised and used a large ziplock bag with a corner snipped off instead – I didn’t get the spiral effect, but it worked a treat! Pipe the cheese mixture onto the cucumber and pop a cherry tomato half on top and that’s it! Simple!

Steps to make Dilly Cucumber Bites

    Slice cucumbers

    Cut the cucumbers into ½-inch thick rounds.

    Slice tomatoes

    Slice 1 pint of grape tomatoes in half (or quarters, if large) and set to one side.

    Make cream cheese topping

    Combine 1 block of cream cheese, 1 container of plain Greek yogurt, 3 tablespoons of minced fresh dill and 1 tablespoon of powdered ranch dressing mix. Stir to mix thoroughly.

    Place cheese mixture in a piping bag

    Transfer the cream cheese mixture to a piping bag.

    Assemble the bites

    Pipe some of the cheese mixture onto each of the cucumber rounds and top each with a cherry tomato half!

    Serve

    Serve these dilly bites on a large sharing platter.
