Dilly Cucumber Bites
I always make a few batches of these Dilly Cucumber Bites as appetizers when I have a cocktail party. They are fresh and suitable for your vegetarian guests. Meat eaters will love them too so it’s a win win!
To make these, start by slicing cucumbers into ½-inch thick rounds. You can leave the skin on, peel them, or partially peel them for a striped look. Mix cream cheese, Greek yogurt, dill and ranch dressing powder. Place the cheese mixture in a piping bag, I didn’t have one last time I made these, so I improvised and used a large ziplock bag with a corner snipped off instead – I didn’t get the spiral effect, but it worked a treat! Pipe the cheese mixture onto the cucumber and pop a cherry tomato half on top and that’s it! Simple!
