3 slices Bacon
4 cloves Garlic peeled and cut lengthwise in half
¼ cup Chicken broth reduced-sodium
¼ cup Greek yogurt plain nonfat
¼ tsp Salt
½ tsp Black pepper
1¼ cups Panko breadcrumbs plain
¼ cup Cheddar cheese shredded
½ cup Scallions finely chopped
Nonstick Cooking spray

My kids love these Simply Smashed Potato Cakes and so will yours. Unlike the usual individual, smashed, whole potatoes, I’ve designed a recipe that involves boiling in garlic and then mashing the potatoes, first. Once smooth, add chicken broth, Greek yogurt, panko breadcrumbs, shredded cheddar cheese and scallions and shape your own individual patties, then cook in bacon drippings until crispy and delicious! Just the sound of these are mouthwatering!

Steps to make Simply Smashed Potato Cakes

Cook bacon

In a nonstick skillet, greased with nonstick spray over medium-high heat, cook the bacon for 3-4 minutes, until crispy. Remove the meat from the skillet leaving the drippings in the skillet and set the skillet aside.

Chop bacon

Chop bacon into pieces and set aside.

Boil potatoes and garlic

In a large pot with enough water, bring the potatoes and garlic to a boil. Reduce the heat and simmer for about 20 minutes until fork-tender. Then drain the liquid and return the potatoes and garlic to the pot.

Season and mash

Mash potatoes with the broth, yogurt, salt and pepper until smooth.

Add filling

Gently fold in ½ cup panko crumbs, cheese, scallions and reserved cooked bacon pieces.

Prepare patties

Using your hands, shape potato mixture into 8 x 3-inch patties and dredge the patties in the remaining ¾ cup panko crumbs, in a shallow dish.

Cook patties

Reheat the bacon drippings over medium-high heat and cook half the potatoes cakes for about 2-4 minutes per side. Cook until browned, then carefully transfer to a serving plate and repeat with remaining potato mixture.

Serve

Serve and enjoy hot.
